APPLE CRUMBLE

INGREDIENTS

SUCRÉE DOUGH

  • 250 g of pastry flour
  • 100 g of Milkaut Profesional Butter
  • 55 g of eggs
  • 125 g of sugar
  • vanilla essence as needed

FILLING

  • 1 kg of green apples
  • 200 g of sugar
  • 50 g of Milkaut Profesional Butter
  • 1 lemon peel
  • 50-100 ml of water
  • 1 cinnamon stick

CRUMBLE

  • 180 g of sugar
  • 180 g of Milkaut Profesional Butter
  • 330 g of pastry flour
  • salt as needed
  • ground cinnamon as needed
  • icing sugar as needed

DULCE DE LECHE SAUCE

  • 200 g of Milkaut Profesional Classic Dulce de Leche
  • 100 ml of Milkaut Profesional Cream 39%

BUTTERCREAM ICE CREAM

  • Quantity as needed.

PROCESS

SUCRÉE DOUGH

Mix all the ingredients, wrap in cling film and refrigerate for 30 min. Line a 22-24 cm diameter tart tin and blind bake with pie weights in a preheated oven at 170 °C for 10-15 minutes. Set aside.

FILLING

Chop the peeled apples and cook in a pot with the rest of the ingredients until tender. Remove and set aside.

CRUMBLE

Make a sandy mix with the ingredients and set aside.

DULCE DE LECHE SAUCE

Dilute Milkaut Profesional Classic Dulce de Leche with warm Milkaut Profesional Cream 39%. Set aside.

ASSEMBLY

Place the filling on the pre-baked crust, cover with the crumble mixture and sprinkle with icing sugar. Bake in a preheated oven at 170 °C for 30-40 minutes. Let it cool and unmold. Serve with a quenelle of ice cream and decorate with dulce de leche sauce.
